Everybody Loves Brownies. FACT!

Trouble is Brownies are calorific especially if you are like us and just cant have one (who can control themselves near fresh baked brownies??)!

WE HAVE THE SOLUTION! Fudgey, Chocolaty brownies that wont bust your waist line! Yes that means you CAN Have more than one!

  • 400g (2 medium) cooked sweet potatoes 
  • 100g dark chocolate (a little extra for the top!)
  • 2 heaped tbsp (20g) oats or oat flour (Ready Brek is wicked for this)
  • 2 scoops of Double Choc Brownie INFINITE WHEY 
  • 2 Large Eggs
  • 1 tsp honey, agave nectar, freedom or sweetener of your choice
  • 1/2 tsp cinnamon (if desired)
  • 1/2 tsp baking powder
  • 1/2 tsp coconut oil
  • Optional: you can throw in a handful of fruits or nuts for extra yum!

Instructions

  1. Pre-heat your oven to 180 degrees C (350 F or gas mark 4)
  2. Skin the potatoes,
  3. Either mash the sweet potatoes in a bowl or add into your food processor and blend until ‘mushy’
  4. Add the chocolate protein powder, oats/oat flour, cinnamon and baking powder and blend together
  5. Melt the chocolate and coconut oil together (in a microwave – stir every 20 seconds and make sure not to burn the chocolate) and add this to the blender along with the eggs and honey before blending again. Then stir in any extra ingredients.
  6. Pour your mixture into a lined or greased baking tray (8″ by 8″) and bake for 25-30 minutes
  7. Allow to cool & slice in to 12 pieces.

Top tip: you can always melt a little choc for the top or sprinkle in a few dark choc chips into the mixture before baking if your a choccy lover!!
